Cauliflower Bites

Cauliflower Bites

Makes enough for 2 (main course) or 4 (appetizer)
Prep time: 15 minutes
Cooking time: 45 minutes plus
(depends how crispy you want them…)

Ingredients:

  • 1 large cauliflower- washed and cut into 1.5″ pieces(spin cauliflower in a salad spinner- drier=crispier)
  • 1/2 cup water
  • 1/4 cup smooth or crunchy almond butter
  • 1/2 cup hot sauce of choice- I use Frank’s Red Hot and a dash or more of Tabasco (Or if I am lucky a homemade hot sauce, but there isn’t always time) use your imagination and follow your tastebuds- if you like heat then bring the heat!
  • 3/4 cup whole wheat flour (to make GF try using chickpea flour instead)
  • 1/4 cup nutritional yeast (AKA ‘nooch’, is not the same as brewer’s yeast- it adds umami and notes of cheese to recipes- find it in any large grocery/health food store…nooch is packed with B vitamins and is also yummy on pasta and popcorn)
  • 3 garlic cloves finely chopped (approximately 1 tablespoon)
  • 1 tablespoon agave or honey

Directions:

  1. Pre-heat oven to 400 degrees, line at least one (you may need two) baking sheets with parchment paper and set aside (I try not to use non-stick cookware so parchment paper is my best friend- there are also silicon baking mats that are amazing)
  2. With the exception of the cauliflower, whisk together all ingredients in a large mixing bowl
  3. Add cauliflower and toss to evenly coat
  4. Place cauliflower on baking sheet leaving space around each piece
  5. Let stand for 20 minutes(or bake immediately if you must!)
  6. Carefully turn every 15 minutes or so

Tip: Serve with your favourite dip (in a pinch we use Zesty Garlic Aioli by Wildwood- you could put this stuff on a gym sock and it would taste good), carrot and celery sticks and a bowl of herbed rice…Enjoy
